In the case of Rey, it represented her adopting her Skywalker name. While in the case of Temple Guards, they give up their identities for their positions of protection.
White
In the Star Wars Canon, the only Jedi that has a white lightsaber is Ahsoka Tano. Though she had previously used green and then blue lightsabers, eventually she owned white ones.
White symbolizes purity, peace and positivity. It also symbolizes neutrality, positivity and the beginning of a new chapter. Ahsoka’s white swords are a symbol of her departure to the Jedi. They prove that she’s neither associated with the Jedi or the Sith.
Bronze
Another color of saber that can be found just in Legends includes bronze. Lowbacca along with Freedon Nadd both owned an saber in bronze. Bronze is a symbol of maturity, a an affinity with nature, and wisdom.
Lowbacca very fittingly held a saber of this color. He was very knowledgeable about computers and biology.
Black (Darksaber)
Similar to the white lightsabers. Only one known black version is found in Canon. The other colors Jedi, Inquisitors, and Sith wield. The Darksaber, however, is the weapon of the Mandalorians.

Orange

Everyone who is a Star Wars fan knows the famous person who holds the purple lightsaber Mace Windu. Samuel L. Jackson wanted to make a statement in Attack of the Clones, which is why he asked George Lucas if he could carry a purple light saber.
The High Republic Era, in Legends, Vernestra Rwoh and Ty Yorrick also owned lightsabers with purple blades. In the Old Republic, Jaina, Anakin Solo as well as Darth Revan also had lightabers with purple blades as well.
